This is one of my family’s favorite dinners. I love it because it’s super quick and easy. Using deli roast beef, you can have a delicious dinner in just minutes. For even more time savings, you can slice the onions and peppers ahead of time and keep them in the freezer. Just thaw and cook.
Here is what you need:
Slice the peppers and onions. Put in pan with 1 to 2 tablespoons of olive oil.
Saute vegetables until slightly browned.
Meanwhile, coarsely chop beef into 1-in squares.
Once vegetables are browned, add beef to pan.
Add a dash of cracked pepper, if you like. Cook for 3 to 5 minutes.
Serve on club rolls with a slice of provolone cheese on top. Enjoy!

You’re welcome! I used to think that you couldn’t have a really delicious meal with only a few ingredients. This recipe is one that proves that to be false. We don’t normally have lots of leftovers (if any) from this dinner! Enjoy! 🙂
