This is not the healthiest supper, but one we all love ๐
Ingredients
- 3 stalks celery
- 2 tablespoons margarine
- 1 1/2 cups sliced green onions (or 1 1/2 tsp. dried onion)
- 1 1/2 pounds hot dogs cut into bite sized pieces (1 1/2 pkgs)
- 1 1/2 cups milk
- 2 eggs, beaten
- 1/4 teaspoon pepper
- 2 cups shredded Cheddar cheese, divided
- 2 5-oz. pkgs. Jiffy cornbread mix
Instructions
- Preheat oven to 400ยฐ. Grease a 9×13 pan. In a skillet, saute celery and hot dogs in margarine for 5 minutes. Add green onions and saute 5 minutes longer. Transfer to a medium bowl.
- In a large bowl, mix milk, eggs, and pepper. Stir into milk mixture with 1 1/2 cups of the cheese. Stir in cornbread mix. Pour into greased baking dish. Top with remaining 1/2 cup of cheese.
- Bake for 20 minutes or until golden brown.
