Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1/2 cup chopped sweet red pepper
- 4 medium red potatoes, cubed (I used frozen hash browns)
- 3 tablespoons vegetable oil
- 1 teaspoon salt
Instructions
- In a skillet over medium heat, saute the onion, peppers and potatoes in oil for 4 minutes. Add salt. Cover and cook for 10 minutes or until potatoes are tender, stirring occasionally.
